Chicken With Mushroom Sauce

Ingredients (servings 4):

230 g  sliced mushrooms Lutece
1 shallot, chopped
1 tsp dried tarragon
1 Tbsp oil
3 Tbsp goat cheese
4 boneless, skin-on chicken breasts


1. PULSE together mushrooms, shallot, and tarragon in food processor.
2. HEAT oil in large skillet over medium heat. Add mushroom mixture and cook until moisture is evaporated and mushrooms are golden brown, about 6 minutes. Stir in goat cheese.
3. SPREAD under skin of chicken breasts. Roast on baking sheet in a 220 °C oven until cooked through, 25 minutes.
